Differing readings in the Weight of coins, phony coins?

depends on the age of the coin for a number of reasons. Today's coins are made with precise machinery and low tolerances, so you would expect modern coins to show minimal variations. Older coins were less precisely made, had more variable metal contents and may suffer from wear, oxidation and dirt. So weight will not be an accurate means for differentiating them.
